Resumo: O tofu é um produto derivado da soja (Glycine max (L.) Merrill) altamente perecível, com curta vida de prateleira. O objetivo desse trabalho foi avaliar o efeito de embalagens de filmes celulósicos e embalagens plásticas flexíveis sobre parâmentros físicos, físico-químicos e microbiológicos na conservação do tofu. A qualidade do tofu foi avaliada segundo a perda de massa, sólidos solúveis totais (SST) (ºBrix), acidez total titulável (ATT), pH, firmeza, atividade de água (Aw), contagem de mesófilos aeróbios totais, cor e umidade. O uso da embalagem de PE se mostrou eficiente para redução de perda de massa até 168 horas. Os valores de pH dos tratamentos com PVC e PE, durante o período de armazenamento foram considerados ideais (valores entre 5,7 – 6,4) para o consumo in natura. A atividade de água se manteve constante durante todo o armazenamento, com variações não significativas. Todos os tratamentos apresentaram contagem de mesófilos aeróbios dentro do limite aceitável segundo a legislação vigente até às 168 horas, com redução dos SST e da ATT. Nos resultados de firmeza, o tofu embalado com PE apresentou o melhor resultado na conservação do tofu quando comparado aos demais tratamentos. Na análise de cor do croma, croma a* e b* apresentaram aumento dos valores, ou seja, houve escurecimento superficial em todos os tratamentos, ressaltando uma pigmentação maior no tofu envolvido com celulose bacteriana (com e sem orégano), enquanto a análise de luminosidade apresentou redução nos valores, confirmando o escurecimento ao final do período de armazenamento, onde apenas os tratamentos com PVC e PE apresentaram menor queda dos valores, mantendo o tofu na cor branca, considerada como ideal no ponto de vista do consumidor. Os tratamentos com CB e CB+ orégano, apresentaram maior influência negativa sobre a grande maioria das análises, visto que apenas na atuação antimicrobiana foi eficaz, principalmente a celulose bacteriana com orégano. Os tratamentos com PVC e PE apresentaram maior influência positiva, principalmente na análise de umidade (um dos principais indicadores de qualidade do tofu). Portanto, a aplicação de biofilmes com e sem óleo essencial não oferece potencial de aplicações em tofu, enquanto os tratamentos com PVC e PE (sem água no interior da embalagem) não prolongaram a vida de prateleira do tofu, no entanto, a embalagem de PE conferiu ao tofu a mesma vida de prateleira que o método convencional - lavagem todos os dias e armazenagem em água - por 5 dias.
Abstract: Tofu is a highly perishable product derived from the soybean (Glycine max (l.) Merrill), with short shelf life. The aim of this work was to evaluate the effect of cellulose packaging films and flexible plastic packages on physical parameter settings, physical-chemical and microbiological in conservation of tofu. The quality of tofu was evaluated according to the weight loss, total soluble solids (TSS) (° Brix), titratable acidity (TA), pH, firmness, water activity (Aw), count of aerobic mesophilic total, color and moisture. The use of the PE film proved to be efficient for reduction of weight loss up to 168 hours. The pH values of treatment with PE and PVC during the storage period were considered ideal (values between 5.7 - 6.4) for in natura consumption. Water activity remained constant throughout the store, with no significant variations. All treatments showed mesophilic aerobic count within the acceptable limit according to current legislation up to 168 hours, with reduced TSS and TTA. The results of firmness, tofu packed with PE showed the best result in the conservation of tofu compared to the other treatments. In the analysis of color chroma, chroma a * and b* values presented increase, or surface browning was in all treatments, emphasizing a greater pigmentation in tofu involved in bacterial cellulose (with and without oregano), while the luminosity analysis showed reduced values, confirming the darkening the end of the storage period, where only treatments with PVC and PE showed lower values drop, keeping the tofu in white color, considered as ideal at the point of view of the consumer. Treatment with CB and CB + oregano, showed greater negative influence on the vast majority of analyzes, since only in the performance antimicrobial was effective, especially bacterial cellulose with oregano. Treatments with PVC and PE had higher positive influence, particularly in moisture analysis (one of the main indicators of quality of tofu). Therefore, the application of biofilms with and without essential oil does not offer potential applications in tofu, while treatments with PE and PVC (without water inside the package) did not extended tofu shelf life, however, the PE packaging gave the tofu the same shelf life than the conventional method - everyday washing and storing in water - for 5 days.
