Resumo: O resíduo da indústria de vinho é crescente e acarreta em poluição. Para a diminuição do mesmo, pode-se utilizar as sementes presentes no resíduo para a produção do óleo de semente de uva, que é rico em ácidos graxos poli-insaturados que não são sintetizados pelo organismo. Os óleos são suscetíveis à oxidação, acarretando em degradação de compostos, este trabalho objetiva propor a extração do óleo da semente da uva e verificar as modificações físicas e químicas, no período de 30 dias, por meio da oxidação lipídica, de modo que se extraia o óleo por diferentes métodos com diferentes tempos e temperaturas. Foi analisado a oxidação, quantidade e qualidade das frações lipídicas. Obteve-se um total de 4,163 kg de sementes de uva. As análises de umidade foram realizadas nas sementes úmidas e secas, obtendo-se respectivamente um teor de 31,2% e 6,7%. Para o teor de extração de óleo em Soxhlet obteve-se 12% e em banho ultrassônico 9,9%. Para a análise de índice de peróxido no dia 1, o óleo extraído por Soxhlet ficou fora dos padrões que a legislação permite, e no dia 30, ambos os métodos tiveram a iniciação da degradação do óleo. No índice de acidez, os dois métodos e dias permaneceram dentro dos padrões internacionais e nacionais, com 0,25 (mg KOH/g) para Soxhlet e 0,15 (mg KOH/g) para banho. Na análise de Índice de Iodo, o resultado está dentro dos parâmetros da legislação no dia 1 com relação aos métodos extrativos, sendo que a extração por banho obteve maior número de moléculas com grau de insaturação. No índice de saponificação, as amostras ficaram dentro da faixa de limite estabelecido pela legislação, divergiram significativamente seu resultado, o banho ultrassônico (195,03 mg KOH/g), possui pequena quebra de seus ácidos graxos, comparado ao método de Soxhlet (171,14 m KOH/g). Quanto aos resultados das análises de cor L*, a extração em banho teve aspecto mais claro, e não houve diferença significava entre o dia 1 e 30, já, para Soxhlet nos dois dias, estatisticamente, houve diferença significativa nas cores, havendo uma tendência para o claro com o armazenamento. Para a coordenada a*, no dia 1 a extração em banho ultrassônico teve uma tendência maior para a cor vermelha que o outro método. Com o armazenamento, no dia 30, a tendência de cor mudou em ambos os métodos e houve diferença significativa, sendo que a extração por Soxhlet tem uma intensidade menor da cor verde que a extração por banho. Para a coordenada b*, ambos os métodos tem tendência para a cor amarela. Os óleos extraídos em Soxhlet, manteram a intensidade da cor nos dias 1 e 30. As amostras extraídas por banho, diferiram estatisticamente, no dia 30 a intensidade da cor amarela diminuiu. O óleo extraído por meio de banho ultrassônico comparado ao Soxhlet, mesmo sem refino e a adição de Conservantes e antioxidantes, nas análises no dia 1, esteve dentro dos parâmetros de qualidade, provando que o método é promissor, pelo fator de economia de reagente, temperatura amena, menor exposição à luz, tempo de extração viável e equipamento de simples manuseio.
Abstract: The waste from the wine industry is growing and causes pollution. For its reduction, the seeds present in the residue can be used to produce grape seed oil, which is rich in polyunsaturated fatty acids that are not synthesized by the body. The oils are susceptible to oxidation, causing degradation of compounds, this work aims to propose the extraction of oil from the grape seed and to verify the physical and chemical changes, within 30 days, through lipid oxidation, so that it is extracted. the oil by different methods with different times and temperatures. Oxidation, quantity and quality of lipid fractions were analyzed. A total of 4.163 kg of grape seeds was obtained. Moisture analyzes were performed on wet and dry seeds, obtaining a content of 31.2% and 6.7%, respectively. For the oil extraction content in Soxhlet obtained 12% and in ultrasonic bath 9.9%. For analysis of peroxide index on day 1, the oil extracted by Soxhlet was outside the standards allowed by the legislation, and on day 30 both methods had the initiation of oil degradation. In the acidity index, both methods and days remained within international and national standards, with 0.25 (mg KOH / g) for Soxhlet and 0.15 (mg KOH / g) for bath. In the analysis of Iodine Index, the result is within the parameters of the legislation on day 1 regarding the extractive methods, and the extraction by bath obtained higher number of molecules with degree of unsaturation. In the saponification index, the samples were within the limit range established by the legislation, significantly diverging their result, the ultrasonic bath (195.03 mg KOH / g), has a small breakdown of its fatty acids, compared to the Soxhlet method (171 , 14 m KOH / g). Regarding the results of the L * color analysis, the bath extraction had a lighter appearance, and there was no significant difference between day 1 and 30, while for Soxhlet on both days, statistically, there was a significant difference in color, with a tendency to the clear with the storage. For coordinate a *, on day 1 the extraction in ultrasonic bath had a greater tendency for red color than the other method. With storage, on day 30, the color trend changed in both methods and there was significant difference, with Soxhlet extraction having a lower intensity of green color than bath extraction. For the b * coordinate, both methods tend to be yellow. The oils extracted in Soxhlet maintained the color intensity on days 1 and 30. The samples extracted by bath differed statistically, on day 30 the intensity of yellow color decreased. The oil extracted by ultrasonic bath compared to Soxhlet, even without refining and the addition of preservatives and antioxidants, in the analyzes on day 1, was within the quality parameters, proving that the method is promising by the reagent economy factor, mild temperature, reduced light exposure, viable extraction time and simple handling equipment.
