Resumo: | Entre as maiores perdas de qualidade de café torrado e moído está o aumento de umidade, o que resultará em aglomeração do produto quando se atingir níveis de 5%. Considerando esse aspecto, o objetivo deste trabalho foi estimar a vida útil de cafés torrado e moído acondicionados em embalagens tipo pillow-pack (almofadas), assumindo a umidade como principal fator de perda de qualidade. Foram analisadas três marcas de cafés torrados e moídos (A, B e C), em que a vida útil do café foi avaliada pela granulometria, umidade inicial, vida útil do café sem embalagem, considerando as temperaturas de estocagem, distribuição e comercialização em relação à umidade e a isoterma de sorção de umidade por modelo matemático de GAB. Foram caracterizados a TPVA e PVA da embalagem e a vida útil do café torrado e moído associada a embalagem. A maior vida útil do café sem embalagem foi observada pela marca B (11,7 dias), seguido das marcas C (9,7 dias) e A (8,7 dias). A Isoterma de sorção mostrou que o café da marca A apresentava maior capacidade de absorção de umidade, confirmado pela menor granulometria dessa marca. O ponto crítico de umidade para as três marcas de cafés foi observado em atividade de água a partir de 0,75. A embalagem da marca A apresentou maior TPVA e PVA, influenciada pelo tipo de material da embalagem (PETmetPEBD) e as menores pela marca B. O café torrado e moído da marca B apresentou a maior estimativa de vida útil associada da embalagem, em 198,5 e 197,5 dias sob as temperaturas de 20ºC e 25ºC, respectivamente. No entanto, considerando apenas a umidade, as três marcas apresentaram estimativa de vida útil maior que a estipulada pela indústria. |
Abstract: | Among the major quality losses of the roast and ground coffee is increased humidity, which results in agglomeration of the product when it reaches level of 5%. Considering this aspect, the objective of this study was to estimate the useful life of roasted and ground coffee packaged in pillow-pack packaging (pads), assuming moisture as the factor of loss of principal quality. Three marks were analyzed roast and ground coffee (A, B and C), where the life of roasted and ground coffee was evaluated by grain size, initial moisture content, life packing coffee without considering the storage temperature distribution and marketing in relative humidity and moisture absorption isotherm for the mathematical model of GAB. Were characterized and PVA WVTR of the package and the life of roasted and ground coffee combined with the package. The longer life without coffee pack of brand B was observed (11.7 days), followed by the marks C (± 9.7 days) and A (8.7 days). Moisture sorption isotherm showed that coffee brand A has higher moisture absorption capacity, confirmed by the finer particles that mark. The critical point of moisture for the three brands of coffee was observed in water activity of 0.75. The packaging of brand A showed higher WVTR and PVA, influenced by the type of packaging material (PETmetPEBD) and the lowest in the brand B. The roast and ground coffee brand B had the highest estimated life of the associated packaging, in 198, 5 and 197.5 days at 20 ° C and 25 ° C respectively. However, considering only the moisture of the three brands were more life than stipulated by the industry. |
